Esta combinaci\u00f3n se produjo en Oriente Medio y se introdujo en Europa durante la \u00e9poca de las cruzadas. <strong>A esto se suman la ca\u00f1a de az\u00facar y diversas frutas ex\u00f3ticas que tambi\u00e9n se incorporaron en aquel momento al \u201cviejo continente\u201d. M\u00e1s all\u00e1 de su historia, suelen llamar la atenci\u00f3n y acompa\u00f1ar diversos platos.<\/strong> En el siguiente art\u00edculo se profundiza sobre su preparaci\u00f3n y se invita a las personas que quieran profundizar a\u00fan m\u00e1s en este campo a cursar un M\u00e1ster en Reposter\u00eda.<\/p>\n\n\n<p><!--more--><\/p>\n\n\n<h2 class=\"wp-block-heading\">Confituras: \u00bfC\u00f3mo se preparan?<\/h2>\n\n\n\n<p>Si bien todo comenz\u00f3 como se describi\u00f3 previamente, en la actualidad se intensifica su sabor a partir de especias como la canela y la vainilla. A esto se puede sumar alcohol, ron o kirsch, tambi\u00e9n caramelo y, en algunos casos, manzana. Si se buscan sabores m\u00e1s intensos, se recomienda usar la cereza, el melocot\u00f3n y la frambuesa, entre otras opciones. Como se ve, es un universo amplio y diverso en el que se manejan m\u00faltiples opciones.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Confitura: la clave<\/h3>\n\n\n\n<p>Una clave de la confitura es el az\u00facar y el manejo que se hace de \u00e9l. Es necesario usar el mismo peso de az\u00facar que el de frutos lavados, secos, pelados y deshuesados. <strong>De esa manera se logra un equilibrio adecuado. Si las frutas tienen mucha agua, se puede aumentar un poco la cantidad de az\u00facar para tratar de igualarla.<\/strong><\/p>\n\n\n\n<p>\u00bfPor qu\u00e9 es importante esto? Porque si la cantidad de az\u00facar es poca o no se cuece lo suficiente, la confitura podr\u00eda llegar a fermentarse y, por tanto, conservarse mal. Por eso es conveniente guardar una relaci\u00f3n adecuada dentro de la preparaci\u00f3n. Si se busca una opci\u00f3n m\u00e1s saludable en relaci\u00f3n con la az\u00facar, se recomienda usar miel.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">\u00bfC\u00f3mo es la elaboraci\u00f3n?<\/h4>\n\n\n\n<p>Todo comienza, m\u00e1s all\u00e1 de los ingredientes, con la temperatura y el tipo de fruta que se desea usar. \u00bfPor qu\u00e9? Porque cuando se usa una temperatura baja es bastante probable que la confitura quede l\u00edquida; si se usa una temperatura muy elevada, lo m\u00e1s seguro es que la fruta se queme. \u00bfEntonces? Al final se espuma la confitura para garantizar su limpidez.<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Segunda fase<\/h6>\n\n\n\n<p>Hay que cocer las frutas. Se disminuye la emisi\u00f3n de vapor y los hervores son m\u00e1s apretados. <strong>Para esto es necesario tener un term\u00f3metro de cocci\u00f3n que ayude a controlar la temperatura.<\/strong> La mayor parte de las confituras cuecen a punto de napado: que consiste en hundir una espumadera y se vuelve a sacar, la confitura resbala, se desliza en una sola masa y queda fijada (densidad de 1,2964). Para otras frutas la densidad puede ser de 1,250.<\/p>\n\n\n\n<p>Hay que tener en cuenta que las frutas guardan su aroma si el proceso de cocci\u00f3n se realiza de manera r\u00e1pida, a fuego vivo para acelerar la evaporaci\u00f3n. Durante el proceso es recomendable remover en algunas ocasiones, para distribuir de mejor manera el calor y evitar que las frutas del fondo puedan quemarse.<\/p>\n\n\n\n<p>Luego del proceso debe guardarse la confitura en tarros en los que se pueda conservar.
