{"id":143944,"date":"2022-04-11T13:06:37","date_gmt":"2022-04-11T11:06:37","guid":{"rendered":"https:\/\/www.emagister.com\/blog\/?p=143944"},"modified":"2022-04-11T13:06:39","modified_gmt":"2022-04-11T11:06:39","slug":"el-corazon-de-una-destileria-el-alambique","status":"publish","type":"post","link":"https:\/\/www.emagister.com\/blog\/el-corazon-de-una-destileria-el-alambique\/","title":{"rendered":"El coraz\u00f3n de una destiler\u00eda: El alambique"},"content":{"rendered":"\n<p>El<strong> alambique<\/strong> es el equipo con el que podemos llevar a cabo el ancestral m\u00e9todo de la <strong>destilaci\u00f3n<\/strong>,\u00a0donde, mediante t\u00e9cnicas f\u00edsicas, se combina una primera etapa de <strong>evaporaci\u00f3n por\u00a0calentamiento<\/strong>, con una segunda etapa de <strong>condensaci\u00f3n por enfriamiento<\/strong>.\u00a0\u00a0<\/p>\n\n\n\n<p>En el caso de una <strong>destiler\u00eda<\/strong>, el alambique es una parte fundamental de esta, lleg\u00e1ndose a tomar como el coraz\u00f3n de la misma.\u00a0<\/p>\n\n\n\n<p>En la <strong>industria de las bebidas alcoh\u00f3licas<\/strong>, gracias a este equipo de destilaci\u00f3n podemos producir\u00a0ic\u00f3nicas bebidas espirituosas como <strong>el whisky, ron, ginebra, licores, aguardientes y m\u00e1s<\/strong>.\u00a0\u00a0<\/p>\n\n\n\n<p>Debemos tener en cuenta que <strong>existen varios tipos de alambique<\/strong>, variando seg\u00fan factores como el material, la forma, el sistema de condensaci\u00f3n, el sistema de calentamiento y m\u00e1s. Algunos\u00a0de ellos son m\u00e1s rudimentarios, dando un resultado con menos calidad y eficiencia, mientras que\u00a0otros han ido evolucionando con el paso del tiempo, optimizando la destilaci\u00f3n y el resultado\u00a0final. Vamos a analizar a continuaci\u00f3n <strong>algunos tipos de alambique<\/strong> seg\u00fan su <strong>composici\u00f3n<\/strong>:\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-alquitaras\">Alquitaras<\/h3>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-full\"><a href=\"https:\/\/www.emagister.com\/cursos-dstila-cen-1163739.htm\"><img loading=\"lazy\" decoding=\"async\" width=\"220\" height=\"147\" src=\"https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/02\/m-24.jpg\" alt=\"\" class=\"wp-image-140687\" srcset=\"https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/02\/m-24.jpg 220w, https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/02\/m-24-80x53.jpg 80w\" sizes=\"auto, (max-width: 220px) 100vw, 220px\" \/><\/a><\/figure><\/div>\n\n\n\n<p>Las<strong> alquitaras <\/strong>son el origen de los alambiques, este equipo de destilaci\u00f3n se caracteriza por ser\u00a0un <strong>sistema lento y de pocos rendimientos<\/strong>, siendo su composici\u00f3n una de las principales causas de esta ineficiencia, dado que el sistema de enfriamiento (agua) se calienta muy r\u00e1pido y no es\u00a0posible reforzar la refrigeraci\u00f3n para acelerar la salida de colas.\u00a0<\/p>\n\n\n\n<p>Este equipo para destilar se compone de <strong>tres elementos conectables<\/strong>: una caldera o pota, donde\u00a0se deposita el alcohol, una base o soporte que une la caldera con el capacete que en su interior\u00a0 se encuentra el condensador.\u00a0\u00a0<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1920\" height=\"1189\" src=\"https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alquitara-1920x1189.png\" alt=\"\" class=\"wp-image-143946\" srcset=\"https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alquitara-1920x1189.png 1920w, https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alquitara-80x50.png 80w, https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alquitara-1536x951.png 1536w, https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alquitara-2048x1268.png 2048w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"alambiques-tradicionales\">Alambiques tradicionales<\/h3>\n\n\n\n<p>Los<strong> alambiques tradicionales<em>, <\/em><\/strong>difieren principalmente de las alquitaras por la <strong>separaci\u00f3n de la\u00a0fase de evaporaci\u00f3n y de condensaci\u00f3n<\/strong>, aportando as\u00ed m\u00e1s control al destilador. Siendo\u00a0importante resaltar que este equipo se caracteriza por su utilidad para todo tipo de\u00a0 destilaciones: alcohol, frutas, plantas y aceites esenciales.\u00a0<\/p>\n\n\n\n<p>El alambique de tradicional o de pera, como tambi\u00e9n es conocido, se compone esencialmente de <strong>5 secciones<\/strong>: <strong>la caldera <\/strong>donde se depositan los l\u00edquidos y frutos, flores y hierbas a destilar,\u00a0seguidamente del <strong>capitel <\/strong>donde se concentra el vapor que contiene las esencias arrastradas por\u00a0el proceso de ebullici\u00f3n y es posteriormente transportado por el<strong> cuello de cisne<\/strong> hasta llegar al\u00a0<strong>refrigerador<\/strong>, que es la zona donde el vapor pasa a estado l\u00edquido y finalmente un <strong>colector <\/strong>en la\u00a0 parte final del alambique donde se recoge el destilado.\u00a0<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"743\" src=\"https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alambique-tradicional.jpg\" alt=\"\" class=\"wp-image-143947\" srcset=\"https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alambique-tradicional.jpg 1200w, https:\/\/www.emagister.com\/blog\/wp-content\/uploads\/2022\/04\/Alambique-tradicional-80x50.jpg 80w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"alambiques-ingleses\">Alambiques ingleses<\/h3>\n\n\n\n<p>Los<strong> alambiques ingleses o de columna<em>, <\/em><\/strong>son similares a los tradicionales, sin embargo, se\u00a0distinguen por <strong>llevar una columna sobre la caldera<\/strong>, la cual tiene una reja en la que se coloca el\u00a0material a destilar, haciendo que se lleve a cabo una destilaci\u00f3n a vapor, sin que el agua toque\u00a0 el producto a destilar. Este equipo es esencial para la <strong>destilaci\u00f3n de aceites esenciales y plantas<\/strong>,\u00a0dado que est\u00e1 pensado para destilar elementos s\u00f3lidos.
