Todo el mundo conoce el sushi, pero existen multitud de platos y t\u00e9cnicas de cocci\u00f3n. La&nbsp;<strong>tempura<\/strong>, por ejemplo, es una t\u00e9cnica de fritura originada en la \u00e9poca en la que los misioneros y sacerdotes buscaron convertir a la poblaci\u00f3n nipona, en siglo XVI.<!--more--><\/p>\n<p style=\"text-align: justify;\">La relevancia del pescado fue dada por los sacerdotes, quienes en tiempos de cuaresma ten\u00edan prohibido comer carne. Pronunciaban la locuci\u00f3n latina&nbsp;<em>tempora ad quadragesimae&nbsp;<\/em>(el tiempo hacia la quaresma), de la apropiaci\u00f3n del t\u00e9rmino \u00abtempora\u00bb devino el de \u00abtempura\u00bb. Sin embargo, algunos investigadores le atribuyen este vocablo a la voz portuguesa&nbsp;<em>tempero<\/em>, que significa condimento.<\/p>\n<p style=\"text-align: justify;\">La cocina portuguesa, por otro lado, tambi\u00e9n es rica en productos de mar y pescados; de hecho, podemos encontrar all\u00ed el plato&nbsp;<em>peixinhos da horta <\/em>o pescaditos de la huerta, una receta a base de jud\u00edas verdes pasadas por una mezcla de harina, huevo, agua o cerveza, fre\u00eddas en abundante aceite. La adaptaci\u00f3n de este plato a costumbres japonesas puede ser su origen; la variante oriental del plato es m\u00e1s ligera, pues aumenta la cantidad de agua en la receta para producir una cubierta m\u00e1s fina y crujiente.<\/p>\n<p style=\"text-align: justify;\">La tempura se elabora principalmente base de pescados mariscos y verduras. Habitualmente se lo empana en una mezcla con harina de trigo o, en algunos casos, puede utilizarse harina de arroz o maicena para generar una tempura m\u00e1s crujiente.<\/p>\n<h3 style=\"text-align: justify;\">Receta de tempura de verduras, por Miguel Ferrero<\/h3>\n<h2 style=\"text-align: justify;\">Tempura de verduras<\/h2>\n<ul style=\"text-align: justify;\">\n<li>Ingredientes para 6 personas<\/li>\n<li>320 ml de agua helada<\/li>\n<li>120 g de harina<\/li>\n<li>1 huevo<\/li>\n<li>Aceite<\/li>\n<li>400 g calabac\u00edn<\/li>\n<li>400 g pimiento<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong>Preparaci\u00f3n:<\/strong><\/p>\n<p style=\"text-align: justify;\">Cortar el calabac\u00edn y pimiento en bastones y reservar. Utilizando una varilla, mezclamos el huevo con el agua y posteriormente incorporamos la harina. Para mezclar la harina, lo podemos hacer con unos palillos o con la varilla. Es importante remover lo justo para disolver la harina, no m\u00e1s, ya que de lo contrario generamos la presencia de gluten que har\u00e1 una masa m\u00e1s el\u00e1stica y menos crujiente. Finalmente a\u00f1adimos un par de cubos de hielo, esto tambi\u00e9n contribuye a generar una cubierta crujiente, el choque t\u00e9rmico de una masa tempura fr\u00eda con el aceite caliente para la fritura. Pasamos la verdura por harina y la tempura, fre\u00edmos en aceite caliente. Al retirar del aceite, reservamos sobre rejilla.
